Beef Strips with Orange and Ginger

This is another recipe I used the green beans for.  I'm not sure where the original of this one came from, sorry.

Beef Strips with Orange and Ginger

1/2 lb lean beef rump, fillet, or sirloin, cut into strips
finely grated rind and juice of 1 orange
1 Tbsp light soy sauce
1 tsp cornstarch
1 tsp grated ginger
2 tsp sesame oil
1 large carrot, cut into thin strips (I actually used baby carrots because that is what I had.)
1/2 lb green beans, tipped and tailed

1) Place beef strips in a bowl and sprinkle over the orange rind and juice.  If possible, leave to marinate for at least 30 minutes.
2) Drain the liquid from the meat and set aside, then mix the meat with the soy sauce, cornstarch, and ginger.
3) Heat the oil in a wok or large frying pan and add the beef.  Stir-fry for 1 minute until lightly colored, then add the carrot and stir-fry for 2-3 minutes more.
4) Stir in the scallions and reserved liquid, then cook, stirring, until boiling and thickened.
5) Serve hot with brown rice.

Total cost: $5.46, make 3 servings for a cost of $1.82 per serving.

Bigfoot's Motor Home Skillet Chicken

Green beans were on sale this week at Publix so I have a couple recipes with the green beans I purchased.

The original of this recipe is in a Fireman's Cookbook my dad has, I went to Amazon to see if they had it, but couldn't find it.

Bigfoot's Motor Home Skillet Chicken

Egg Noodles
5 oz chicken pieces
1 small onion, chopped
1 red bell pepper, chopped
1/2 lb green beans, tipped and tailed
1 clove garlic, minced
1/4 cup fresh lemon juice
1/4 cup water
1 Tbsp Worcestershire sauce
2 tsp cornstarch
1/2 tsp salt
1/4 tsp black pepper

1) Cook noodles.
2) In a large skillet cook chicken, set aside.
3) In the skillet add onion, red pepper, green beans, and garlic.  Cook for 5 minutes.
4) In a small bowl, whisk the lemon juice, water, Worcestershire sauce, cornstarch, salt and pepper, until the cornstarch is dessolved.  Add to the skillet and add the chicken.  Bring to a simmer and cook for about 1 minute, until sauce thickens.
5) Serve over the noodles.

Total cost: $6.18, made three servings so a total of $2.06 a serving.

What everyone must read

Today I was in a meeting for work and the topic of Mr Poppers Penguins came up.  And there were people who had not read it.  I was shocked, shocked!  Then this evening I am currently listening to NPRs Pop Culture Happy Hour and they are discussing books your children should read.  So this got me thinking about books I feel everyone should read, so I thought I might make my own list.  Here goes!

Arts Bowling League

The arts institutions here have started a bowling league.  So as any respectable museum we have a team.  We are the Corn Pounders, named after an artifact in our museum.  A corn pounder is what the Seminole and Miccosukee use to make sofkee a staple of their diet, and it does just that pound corn into a grits size meal.  So far we have bowled twice, and are bowling again this week.  We may not be the best bowlers in the league, but I think we have the most fun.

Wait Wait Don't Tell Me

One of the podcasts I listen to is the NPR radio show Wait Wait Don't Tell Me.  They were recording a show in Miami a few weeks ago, and I got to go!  It was so much fun.
